Chocolate lava cake with molten centre running out

Decadent individual chocolate cakes with a warm, molten centre. An irresistible dessert that is surprisingly quick to make.

  1. Preheat oven to 220°C (425°F). Butter four ramekins generously and dust with cocoa powder.
  2. Melt dark chocolate and butter together in a heatproof bowl over simmering water (or microwave in 30-second bursts). Stir until smooth and let cool slightly.
  3. Whisk eggs, egg yolks, sugar, and vanilla extract together until thick and pale, about 3 minutes.
  4. Fold the melted chocolate mixture into the egg mixture. Sift in the flour and a pinch of salt, and fold gently until just combined.
  5. Divide batter evenly among the prepared ramekins. Place on a baking sheet.
  6. Bake for 10-12 minutes. The edges should be set but the centre still jiggly.
  7. Let rest for 1 minute, then carefully invert each onto a plate. Serve immediately with a dusting of cocoa powder and a scoop of vanilla ice cream.
