Chocolate Lava Cake

Decadent individual chocolate cakes with a warm, molten centre. An irresistible dessert that is surprisingly quick to make.

Ingredients
- 200 g Dark chocolate (70%)
- 100 g Unsalted butter
- 3 Eggs
- 2 Egg yolks
- 80 g Caster sugar
- 40 g Plain flour
- 1 tbsp Cocoa powder (for dusting)
- 1 tsp Vanilla extract
- Pinch of sea salt
Instructions
- Preheat oven to 220°C (425°F). Butter four ramekins generously and dust with cocoa powder.
- Melt dark chocolate and butter together in a heatproof bowl over simmering water (or microwave in 30-second bursts). Stir until smooth and let cool slightly.
- Whisk eggs, egg yolks, sugar, and vanilla extract together until thick and pale, about 3 minutes.
- Fold the melted chocolate mixture into the egg mixture. Sift in the flour and a pinch of salt, and fold gently until just combined.
- Divide batter evenly among the prepared ramekins. Place on a baking sheet.
- Bake for 10-12 minutes. The edges should be set but the centre still jiggly.
- Let rest for 1 minute, then carefully invert each onto a plate. Serve immediately with a dusting of cocoa powder and a scoop of vanilla ice cream.
