Oven-Baked Lemon Garlic Salmon

Tender salmon fillets baked in the oven with garlic, lemon, melted butter, and fresh dill. Cooking the fish at moderate heat keeps it moist and flaky while infusing it with aromatic pan juices.

  1. Preheat the oven to 200°C (180°C fan). Lightly grease a baking dish or line a rimmed baking sheet with baking paper.
  2. Pat the salmon fillets thoroughly dry on both sides with paper towels. Season both sides evenly with the fine sea salt and black pepper.
  3. Arrange the salmon fillets skin-side down in the prepared baking dish, leaving a little space between each piece.
  4. In a small bowl, whisk together the melted butter, olive oil, minced garlic, and 1 tablespoon of fresh lemon juice. Spoon the mixture evenly over the top of each fillet.
  5. Tuck the thin lemon slices between and slightly over the salmon fillets.
  6. Bake on the middle oven rack for 12 to 15 minutes, until the salmon is opaque on the sides and flakes easily with a fork at the thickest part (internal temperature of 52–54°C for medium, or 60°C if you prefer it well done).
  7. Remove from the oven, spoon the warm pan juices over the fish, and sprinkle generously with fresh dill before serving immediately.
