Grilled Lobster with Garlic Lemon Butter

Lobsters split in half and grilled with a garlic, parsley and lemon butter, basted while they cook and served straight away with extra lemon.

Ingredients
- 2 fresh lobsters (or thawed, raw)
- 100 g butter (at room temperature)
- 2–3 garlic cloves (finely grated)
- 1 tbsp chopped parsley
- lemon zest + a splash of lemon juice
- salt and pepper
Instructions
- Prepare the lobster: Cut the lobsters in half lengthwise and remove the stomach sac (the small pouch in the head). Garlic butter: Mix the softened butter with the garlic, parsley, lemon, salt, and pepper.
- Grill: Place the lobster halves flesh-side up. Spoon the seasoned butter generously over the meat. Cook over indirect heat for 8–12 minutes, basting with the butter during cooking. Serve immediately with extra lemon.
