Classic French bread with a crispy crust

Ingredients
- 12 dl flour
- 5 dl lukewarm water (approx. 37°C)
- 25 g fresh yeast
- 1.5 tsp salt
Instructions
- Dissolve the yeast. Crumble the yeast into a mixing bowl and stir it into the lukewarm water until fully dissolved.
- Stir in the salt, then gradually add the flour until a smooth dough comes together.
- Knead for about 10 minutes by hand (or 5–7 minutes in a stand mixer) until the dough is smooth and elastic.
- Cover the bowl with a clean kitchen towel and let the dough rise for about 45–60 minutes, or until doubled in size.
- Divide the dough into 3 equal pieces and shape each into an elongated baguette. Place them onto a baking sheet lined with parchment paper.
- Cover and leave to rise for an additional 30 minutes.
- Using a sharp knife or baker's lame, make a few diagonal slashes across the top of each loaf.
- Bake in the center of the oven at 250°C for 10–15 minutes until golden brown. Toss a splash of water onto the bottom of the oven right after placing the baguettes inside to create steam, which ensures a crisp crust.
