Beef bourguignon with mushrooms and pearl onions in red wine sauce

A rich and hearty French stew featuring tender beef slow-cooked in red wine with carrots, onions, and mushrooms. Perfect for a comforting meal.

  1. Pat beef dry and season with salt and pepper. In a large Dutch oven, cook bacon until crisp. Remove bacon and set aside, reserving rendered fat.
  2. Add olive oil to the Dutch oven. Brown beef in batches, then remove and set aside.
  3. Add chopped large onion, carrots, and garlic to the pot. Sauté until softened.
  4. Return beef to the pot, sprinkle with flour, and stir to coat. Cook for 1 minute.
  5. Pour in red wine and beef broth, scraping up any browned bits from the bottom. Stir in tomato paste, thyme, and bay leaf.
  6. Bring to a simmer, then cover and transfer to a preheated oven at 160°C (325°F) for 2-3 hours, or until beef is very tender.
  7. While the stew cooks, sauté mushrooms and pearl onions in a separate pan until golden brown.
  8. Once the stew is cooked, stir in the sautéed mushrooms, pearl onions, and reserved bacon. Adjust seasoning if needed. Serve hot with mashed potatoes or crusty bread.
