Deluxe Chocolate Mousse

An airy mousse of dark chocolate, whipped cream and egg whites. Chilled for at least two hours and served with raspberries, flaky salt and grated chocolate.

Ingredients
- 200 g dark chocolate (70%)
- 3 eggs
- 3 dl heavy whipping cream
- 2 tbsp granulated sugar
- 1 pinch of salt
Instructions
- Melt the chocolate in a heatproof bowl set over a simmering water bath. Allow to cool slightly. Separate the eggs into yolks and whites. Whip the cream to soft peaks (do not overwhip). Stir the egg yolks into the melted chocolate. Beat the egg whites with the salt until frothy, then add the sugar and whip until glossy peaks form. Fold the whipped cream into the chocolate, then gently fold in the egg whites. Divide among serving glasses and chill in the refrigerator for at least 2 hours.
- Serve garnished with raspberries, flaky sea salt, and grated chocolate.
