A British comfort classic featuring rich, slow-simmered minced lamb with aromatics and vegetables under a deeply browned layer of buttery mashed potatoes. Raking the mash with a fork before baking creates crisp, caramelised ridges that contrast with the savoury meat filling beneath.

  1. Place the cut potatoes in a large pot, cover with cold salted water, and bring to a boil over medium-high heat. Simmer until completely tender when pierced with a fork, about 15-18 minutes.
  2. Drain the potatoes thoroughly and let them steam dry in the colander for 2-3 minutes. Return them to the warm pot and mash until smooth, then stir in 50 g unsalted butter, 80 ml warm milk, 1/4 tsp nutmeg, 1/2 tsp salt, and 1/4 tsp black pepper. Once slightly cooled, beat in the egg yolk. Cover and set aside.
  3. While the potatoes are cooking, heat 1 tbsp olive oil in a wide, heavy-bottomed skillet or Dutch oven over medium-high heat. Add the minced lamb and cook, breaking it apart with a wooden spoon, until browned and cooked through, about 6-8 minutes. If there is excessive rendered fat, spoon away all but about 1-2 tbsp.
  4. Add the chopped onion, diced carrots, and diced celery to the lamb. Cook over medium heat for 6-8 minutes until the vegetables soften and begin to brown. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Clear a small space in the pan, add 2 tbsp tomato paste, and cook for 1-2 minutes until darkened to a brick red. Sprinkle 2 tbsp flour over the meat and vegetables, stirring continuously for 1 minute to coat everything evenly.
  6. Pour in 150 ml red wine, scraping up any browned bits stuck to the bottom of the pan, and simmer for 2 minutes until reduced by half. Pour in 350 ml stock, 2 tbsp Worcestershire sauce, 1 tsp rosemary, and 1 tsp thyme. Season with 1/2 tsp salt and 1/4 tsp pepper. Bring to a boil, then reduce the heat to low and simmer uncovered for 15 minutes until the sauce thickens into a glossy gravy.
  7. Preheat the oven to 200°C (180°C fan). Stir the frozen peas into the lamb mixture and remove from the heat. Taste and adjust salt and pepper if needed.
  8. Transfer the lamb mixture into a 20x30 cm baking dish, spreading it into an even layer. Spoon the mashed potatoes gently over the top, starting from the edges toward the center to seal in the filling. Use the back of a fork to create ridges across the entire surface.
  9. Bake for 25-30 minutes, until the potato peaks are golden brown and the filling is bubbling up around the edges. Rest for 10 minutes before serving so the filling can set.
