Guacamole

An authentic Mexican guacamole featuring coarsely mashed avocado, fresh cilantro, lime, and jalapeño. The secret lies in pounding the aromatics with salt into a paste first, unlocking maximum flavor and achieving the perfect texture.

Ingredients
- 3 pcs ripe avocados (preferably Hass)
- 0.5 pcs small red or white onion, very finely chopped
- 1 pcs fresh jalapeño or serrano chili, seeded and finely chopped
- 1 clove small garlic clove, grated or finely minced
- 0.5 pcs pot of fresh cilantro, leaves and tender stems coarsely chopped
- 1.5 tbsp freshly squeezed lime juice
- 0.75 tsp flaky sea salt (or 0.5 tsp fine sea salt)
- 1 pcs firm tomato, seeded and finely chopped (optional)
Instructions
- Place half of the finely chopped onion, half of the chili, the garlic, and the salt in a mortar or on a cutting board. Pound or mash with the back of a knife or spoon until a coarse, aromatic paste forms. This releases the onion juices and essential oils.
- Halve the avocados, remove the pits, and scoop the flesh with a spoon into a spacious bowl (or directly into the mortar/molcajete).
- Mash the avocado with a fork or potato masher to your desired consistency. Leave plenty of chunks for a rustic, traditional texture; avoid pureeing it smooth with an immersion blender.
- Fold in the onion paste, the remaining chopped onion, chili, lime juice, and chopped cilantro. Stir gently with a spatula until evenly combined.
- Finally, gently fold in the chopped tomatoes if using. Season to taste with additional salt or lime juice if needed, and serve immediately with tortilla chips.
