Deluxe Apple Crumble with Vanilla Custard

Apple crumble made with tart apples, cinnamon, and cardamom under a crisp topping of butter, rolled oats, and brown sugar. Served warm with homemade vanilla custard.

Ingredients
- 6 apples (preferably tart)
- 1 dl sugar
- 2 tsp cinnamon
- 1 tsp cardamom
- 1 tbsp lemon juice
- 150 g butter
- 2 dl all-purpose flour
- 1 dl rolled oats
- 1 dl brown sugar
- 1/2 tsp salt
- 3 dl milk
- 1 dl cream
- 1 vanilla pod
- 3 egg yolks
- 0,75 dl sugar
Instructions
- Preheat the oven to 200°C. Peel and slice the apples. Toss with the sugar, spices, and lemon juice. Transfer to a pie dish. Rub the butter, flour, oats, sugar, and salt together with your fingertips until crumbly. Scatter evenly over the apples. Bake for 25–30 min until golden brown.
- Vanilla custard: Bring the milk, cream, and vanilla to a simmer. Whisk together the egg yolks and sugar. Gradually whisk the hot milk mixture into the eggs. Return to low heat and cook gently, stirring constantly, until the custard thickens (do not let it boil!).
- Serving: Serve the crumble warm with cold vanilla custard.
