Pita Bread

Freshly baked pita breads with a puffed pocket

Homemade pita bread that puffs up in the oven – perfect for stuffing with kebab, falafel, or fresh vegetables. Makes about 8–10 breads.

  1. Crumble the yeast into a mixing bowl and dissolve it in the lukewarm water.
  2. Add the olive oil, salt, and sugar.
  3. Gradually incorporate the flour until a smooth dough forms.
  4. Knead the dough for about 8–10 minutes until elastic.
  5. Cover with a tea towel and let rise for about 1 hour.
  6. Preheat the oven to 250°C (preferably with a baking sheet or baking stone inside).
  7. Divide the dough into 8–10 pieces and roll them into balls.
  8. Roll each ball out into thin rounds (about ½ cm thick).
  9. Transfer onto the hot baking sheet and bake in the center of the oven for 4–6 minutes. The breads should puff up like balloons – make sure the oven is piping hot!
