American Crab Cakes

Ingredients
- 450 g (1 lb) lump crab meat
- 1/4 cup mayonnaise
- 1 egg
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1/2 tsp Old Bay seasoning or similar seafood seasoning
- 1 tbsp fresh parsley, chopped
- 1/2 cup breadcrumbs
- 1 tbsp lemon juice
- Salt and pepper to taste
- Butter or oil for frying
Instructions
- In a bowl, whisk together mayonnaise, egg, Dijon mustard, Worcestershire sauce, lemon juice, and seasoning.
- Gently fold in the crab meat, parsley, and breadcrumbs. Be careful not to break up the crab too much.
- Form the mixture into small patties (about 5–6 cm wide).
- Chill in the fridge for 20–30 minutes to help them hold together.
- Heat butter or oil in a pan over medium heat.
- Fry the crab cakes for about 3–4 minutes per side, until golden brown and heated through.
- Serving:
- Serve warm with lemon wedges.
- Add a dipping sauce like tartar sauce, aioli, or a simple spicy mayo.
- Garnish with fresh herbs for a nice presentation.
