Dutch Gourmetten (Tabletop Griddle Feast)

Gourmetten is the beloved Dutch tabletop dining tradition where guests cook small portions of meat, vegetables, and eggs in individual miniature pans. Accompanied by fresh sauces, crusty baguette, and herb butter, it turns dinner into a relaxed, communal feast.

Ingredients
- 300 g beef tenderloin or sirloin, cut into bite-sized cubes
- 300 g chicken breast fillet, cut into thin strips
- 300 g pork tenderloin, cut into medallions
- 200 g mini chipolata sausages or mini meatballs
- 200 g button mushrooms, cleaned and sliced
- 1 pcs red bell pepper, diced into 1.5 cm pieces
- 1 pcs yellow onion, finely chopped
- 1 pcs small zucchini, sliced into thin rounds
- 150 g cherry tomatoes, halved
- 4 pcs eggs, lightly beaten in a small pitcher
- 100 g grated Gouda cheese
- 1 pcs crusty baguette, sliced
- 100 g garlic and herb butter, softened
- 3 tbsp neutral cooking oil (such as sunflower or rapeseed oil)
- 1/2 tsp freshly cracked black pepper
- 1 tsp fine sea salt
- 100 ml garlic mayonnaise (knoflooksaus)
- 100 ml Dutch peanut satay sauce, warmed
- 100 ml cocktail or cocktail-whiskey sauce
Instructions
- Pat all the meats completely dry with paper towels. Arrange the diced beef, chicken strips, pork medallions, and mini sausages across small serving platters or shallow bowls. Season lightly with half of the fine sea salt and freshly cracked black pepper.
- Arrange the sliced mushrooms, diced bell pepper, chopped onion, sliced zucchini, and cherry tomatoes in separate small bowls so guests can easily reach them.
- Pour the beaten eggs into a small pitcher. Place the grated Gouda cheese, sliced baguette, herb butter, and cold dipping sauces (garlic mayonnaise and cocktail sauce) into small ramekins or dishes around the table. Warm the satay sauce gently in a small pot or microwave and keep warm.
- Set the electric gourmet grill (with top griddle plate and lower slots for miniature pans) in the center of the table. Lightly brush the upper griddle surface and the mini pans with a little neutral oil. Preheat the grill on medium-high heat for 10 minutes until hot.
- Invite guests to cook their selections. Sear meats and sausages directly on the upper ribbed griddle plate for 2 to 4 minutes per side, depending on thickness, until cooked through.
- Use the miniature lower pans to sauté onions, mushrooms, or zucchini, to melt grated cheese over vegetables, or to cook mini omelettes and fried eggs using a splash of beaten egg.
- Serve freshly grilled meats and vegetables hot off the plate with slices of baguette, herb butter, and your choice of cold or warm sauces.
