Stamppot

A traditional Dutch dish consisting of mashed potatoes mixed with other cooked vegetables, often served with smoked sausage or bacon. It's a hearty and warming side dish perfect for cold weather.

Ingredients
- 1 kg Potatoes
- 500 g Kale (or other greens like endive, sauerkraut, carrot and onion)
- 100 ml Milk
- 50 g Butter
- to taste Salt
- to taste Black Pepper
- pinch Nutmeg
- 1 Smoked Sausage (e.g., Rookworst)
Instructions
- Peel potatoes and cut them into large, even-sized pieces. Place them in a large pot.
- Wash and chop the chosen vegetable (e.g., kale) and add it on top of the potatoes in the pot. Lightly salt.
- Add just enough water to cover the bottom of the pot (about 1-2 cm). Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until both potatoes and vegetables are tender.
- While potatoes and vegetables are cooking, prepare the smoked sausage according to package instructions (often simmered in water or baked).
- Once cooked, drain the potatoes and vegetables thoroughly. Return them to the hot pot.
- Add milk, butter, salt, pepper, and a pinch of nutmeg.
- Mash the potatoes and vegetables together using a potato masher until well combined. The mixture should still have some texture, not completely smooth.
- Taste and adjust seasoning if necessary.
- Serve hot, often with a 'kuiltje' (little well) in the center of the stamppot filled with some gravy or cooking liquid from the sausage, alongside slices of smoked sausage.
