Luxurious Cinnamon Buns with Cardamom & Sugar Syrup

Luxurious Swedish cinnamon buns with cardamom and sugar syrup – makes about 25–30 large, juicy buns made with Karlsbad dough for an extra decadent touch.

Ingredients
- 5 dl milk
- 50 g fresh yeast
- 150 g butter, room temperature
- 1.5 dl granulated sugar
- 0.5 tsp salt
- 1-2 tbsp ground cardamom
- ca 12-14 dl all-purpose flour
- 1 pc egg
- 200 g butter, softened
- 1.5 dl granulated sugar
- 1 dl brown sugar
- 2 tbsp ground cinnamon
- 1 tbsp vanilla sugar
- 1 tsp cornstarch
- 1 pc egg
- 1 tbsp milk or water
- pearl sugar
- pinch of salt
- 0.5 dl water
- 0.5 dl granulated sugar
- 1 tsp vanilla sugar
Instructions
- Mix the dough: Crumble the yeast into a mixing bowl. Heat the milk until lukewarm (37°C) and pour it over the yeast. Stir until completely dissolved.
- Add the ingredients: Add the sugar, cardamom, salt, and room-temperature butter (in small pieces). Gradually add the flour and knead the dough, preferably in a stand mixer, for at least 10–15 minutes until smooth, elastic, and pulling away from the sides of the bowl.
- First rise: Cover the bowl and let the dough rise for about 45–60 minutes until doubled in size.
- Make the filling: Beat all the filling ingredients together into a smooth, creamy paste.
- Rolling out: Divide the dough into two halves. Roll each half out into a rectangle (about 3–4 mm thick). Spread the filling evenly over the dough sheets.
- Shape the buns: Fold the dough into thirds (like a letter: fold one third over the center, then the other third over top). Cut into roughly 2 cm wide strips. Cut a slit down the center of each strip and twist the strands, then wrap them into a knot.
- Second rise: Place the buns in paper baking cups or on a baking sheet lined with parchment paper. Cover with a kitchen towel and let rise for another 60–90 minutes. Note: A long rise is the key to wonderfully airy buns.
- Baking: Preheat the oven to 225°C (top and bottom heat). Brush the buns with beaten egg mixed with a pinch of salt and a splash of milk or water. Sprinkle with pearl sugar. Bake in the center of the oven for 8–10 minutes until golden brown.
- Sugar syrup: Bring the water and sugar to a boil until the sugar dissolves. Stir in the vanilla sugar.
- Finish: Brush the warm buns with the sugar syrup immediately after removing them from the oven. This creates an incredible shine and locks in the moisture.
