Salmon Pasta with Spinach (4 servings)

Creamy pasta with cubed salmon, fresh spinach and Parmesan in a sauce of cream, white wine, garlic and lemon, finished with Parmesan and black pepper.

Ingredients
- 400 g salmon fillet
- 300 g pasta
- 2 dl heavy cream
- 1 dl grated Parmesan cheese
- 2 handfuls fresh spinach (or frozen, thawed)
- 1 yellow onion
- 1 dl white wine
- 2 garlic cloves
- 1 tbsp olive oil
- 1/2 lemon (juice)
- Salt and black pepper
- A little cornstarch to thicken the sauce
Instructions
- Cook the pasta according to package instructions. Reserve a little pasta water.
- Cut the salmon into cubes.
- Finely chop the onion and garlic.
- Sauté the onion and garlic in olive oil until soft.
- Add the white wine to the sauce.
- Thicken the sauce so it becomes lightly creamy.
- Add the salmon and cook gently for 2–3 minutes.
- Stir in the cream, lemon juice, and spinach.
- Simmer for a few minutes until the salmon is cooked through.
- Toss in the pasta and a splash of pasta water for creaminess.
- Top with Parmesan and black pepper.
