A classic and satisfying meal featuring a perfectly fried steak served alongside simple boiled or roasted potatoes. A delicious and fulfilling dinner.

  1. Remove steak from the refrigerator 30 minutes before cooking to bring it to room temperature. Pat dry with paper towels and season generously with salt and black pepper.
  2. Peel and chop potatoes into even-sized pieces. Place them in a pot, cover with cold water, add a pinch of salt, and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain well.
  3. While potatoes cook, heat a heavy-bottomed skillet (preferably cast iron) over medium-high heat until very hot. Add olive oil.
  4. Carefully place the seasoned steak in the hot skillet. Sear for 2-4 minutes per side for medium-rare, depending on thickness. For added flavor, add butter, smashed garlic, and rosemary to the pan during the last minute of cooking, basting the steak.
  5. Remove steak from skillet and let it rest on a cutting board for 5-10 minutes before slicing. This allows the juices to redistribute.
  6. Serve the rested steak alongside the hot boiled potatoes. You can finish the potatoes with a knob of butter or fresh herbs if desired.
