Cod in Creamy Sauce (4 Servings)

Pieces of cod gently simmered in a creamy sauce with leek, garlic, Dijon and lemon, served with boiled potatoes or rice and green peas.

Ingredients
- 600 g cod fillets
- 2 dl heavy cream
- 1 dl milk
- 1 leek
- 2 garlic cloves
- 1 tbsp butter
- 1 tsp Dijon mustard (optional)
- 1/2 lemon (juice)
- Salt & pepper
- Fresh dill or parsley
Instructions
- Cut the cod into portion-sized pieces and season lightly with salt. Slice the leek and mince the garlic. Sauté the leek and garlic in butter over medium heat until softened. Pour in the cream and milk, then add the lemon juice and mustard. Add the cod to the sauce. Simmer gently for about 8–10 minutes (do not let it boil too vigorously). Season to taste with salt, pepper, and herbs.
- Serve with boiled potatoes or rice and green peas.
